This hands-on class for vegans will make farmers' market sweet corn soup with carrots and cannellini beans topped with fresh basil and pine nuts, smoky roasted eggplant and market fresh tomatoes "BLT" with tofu, Caryn's ultimate vegetable soup, plus a kale-chickpea-artichoke summer salad with peppadews and avocado tossed in hemp seed ranch dressing.
