The crowds are going wild over the annual bounty of sensational New Mexico Hatch chile peppers. Join Matt Sassman, the produce manager at Straub’s Town & Country location, in an exciting evening starting on the patio roasting the peppers in a hopper. This hands-on class will create fiesta dip with restaurant-style queso topped with seasoned ground beef and Hatch chiles with tomato pico de gallo, grilled corn-black bean salad with charred red onions and cotija cheese with Hatch chile vinaigrette served with fresh chips, Hatch chile chicken enchilada "lasagna" layered with homemade refried beans and queso and cheese, plus a Hatch chile pineapple-ginger Mule cocktail.
