Caryn Dugan, the plant-based educator known as the STLVegGirl, and owner and founder of Center for Plant-based Living, shares her experiences of living a plant-based diet for a new start to a new year. This hands-on class will make pinto bean-onion-tomato tortilla soup with bell peppers and jalapeños, quinoa-roasted carrot salad with a creamy dressing topped with dates and sunflower seeds, kale Caesar salad with maple syrup and Dijon, plus a plum tart with oats, ginger and maple syrup.
