Elizabeth Georgin, from Kerala, India, shares traditional dishes from her country in a monthly series. This hands-on class will learn to create beef fry - a staple dish from Kerala with deep-fried spice-coated beef thinly sliced then sautéed with shallots and curry leaves, vegetable carrot-potato-pea stew simmered in coconut milk with beans and whole spices, Kerala chickpea curry with coconut milk, ghee rice, plus plantain payasam for dessert.
