As the seventh generation of the Marcoot family to raise Jersey cattle, Amy Marcoot and her sister turned the family dairy farm into a creamery with artisan and farmstead cheeses in 2010. Welcome this dedicated cheesemaker for an exciting hands-on class learning how to make three fresh cheeses, including a mild, creamy white ricotta with a soft texture and slightly sweet flavor, quark - a German-style mild soft cheese most similar to cream cheese and sour cream that can be used with herbs and preserves, plus a whole milk hand-pulled delicious and buttery mozzarella that will be hand-stretched in class.
