The word is out on the street that Caryn Dugan, the plant-based educator known as the STLVegGirl, and owner and founder of Center for Plant-based Living, knows a thing or two about asparagus. This hands-on class will create a vegan dinner of wild rice and asparagus soup with potatoes and cannellini beans, roasted fingerlings and asparagus with balsamic and thyme, tomato-asparagus-kale salad with red onions and sorghum, and asparagus pasta with lemon gremolata.
