Zucchini-Basil Muffins

2 cups flour
1 tsp. salt
3/4 tsp. baking soda
1 1/2 tsp. baking powder
1/4 tsp. black pepper
3 Tbs. butter
1 1/2 Tbs. sugar
2 eggs
1 1/4 cups buttermilk
1 1/2 cups grated zucchini
1/3 cup fresh basil, chopped

Combine the dry ingredients. Cream the butter and sugar, and then add the eggs. Stir in the flour, then buttermilk, then zucchini and basil. Bake in greased mini-muffin tins at 400 for 15 minutes.
