RECIPES  OF THE WEEK


Tilapia with Lemon-Caper Sauce

            4 tilapia fillets
2 tbsp. olive oil
1 lemon
4 Tbs. butter
2 Tbs. capers
2 Tbs. minced fresh parsley
Salt and pepper           

 

            Season the tilapia with salt and pepper. Heat the olive oil in a skillet and brown the pretty side of
            the tilapia. Remove from the pan. While the pan is still hot, add butter and cook until browned.
            Add the zest and juice of a lemon, caper, and parsley. Pour over fish.
