RECIPES  OF THE WEEK

 

  Scones

2 cups  flour
1/2  tsp. salt
1-1/2 tsp. baking powder
1/3 cup sugar
1/2 cup unsalted butter
1 cup heavy cream
1/2 cup dried fruit (currants, cherries, cranberries etc.)

Mix flour, salt, baking powder and sugar. Using a pastry blender mix in butter until marble size pieces. Add cream and fruit. Mix to form ball, DO NOT OVER MIX DOUGH. Drop by teaspoons onto a lined baking sheet. Bake at 375º for 10-15 minutes.

For savory scones cut sugar back to 2 tsp. and add 2 tbsp. of fresh chopped herbs.
