Planked Salmon with Fresh Fruit Salsa

2 lbs. salmon

Marinade

1  bottle beer
1 cup maple syrup
2 cloves garlic, minced
¼ cup Dijon mustard
sea salt
pepper

Mix ingredients, and marinate salmon for 2-8 hours.  Soak a cedar grilling plank in water for 30 minutes. Remove from water and place salmon on plank. Place plank on a prepared BBQ, close lid and grill for 15-20 minutes. If using the baking cedar plank, place salmon on a well greased cedar baking plank. Bake 450° for 15-20 minutes.

Fruit Salsa
2 cups fruit (mango, papaya, pineapple, peaches)
1 red bell pepper, chopped
¼ cup cilantro, chopped
1 jalapeno, diced
3 green onions, sliced
fresh squeezed lime juice

Mix all ingredients together and let sit for at least 1 hour. Serve over salmon.
