Pizza Dough

1 cup warm water
2 ¼ tsp. yeast
pinch sugar
2 Tbsp. olive oil
1 tsp. sea salt
1 tsp. sugar
3 cups flour

Combine the pinch of sugar and olive oil, sprinkle yeast over water and let dissolve. Whisk yeast and water mixture. Combine 2 cups of flour with the salt and remaining sugar. Add water mixture. Add enough remaining flour to form a ball, but do not add to much water. Knead dough until smooth. Place dough in a greased bowl. Cover with plastic wrap and let rise until doubled (approx. 1 hour). Turn dough onto a floured surface. Punch dough down and cut in half. Roll each half into a ball, cover with plastic wrap and let sit for 10 minutes. Roll balls to desired thickness and top as desired. Bake 475° on a pre-heated baking stone for 10-15 minutes.
