4 oz. pancetta, diced and fried or prosciutto
½ lb. brioche, sliced and toasted
1 1/4 cup heavy cream
1 1/4 cup milk
1 tsp. salt
Tabasco to taste
5 eggs
12 oz. Gorgonzola
12 oz. chevre (goat cheese)

In a baking pan, do two layers of bacon, bread, and cheese. Whisk together the milk, cream, eggs, and seasonings and cover the ingredients with the custard. Bake in a ceramic baking dish at 350 for 45 min.
