RECIPES  OF THE WEEK

 

  Mandel Bread

3 eggs
1 cup sugar
1 tsp. vanilla
1/2 cup vegetable oil
2 tsp. baking powder
1/2 tsp. salt
2-1/2 cups flour
12 oz. chocolate chips or raisins
1 tbsp. sugar plus 1 tsp. cinnamon, mixed

Combine eggs and sugar with wooden spoon.  Mix in vanilla, oil, baking powder, salt and flour.  Add chocolate chips or raisins.  Preheat oven to 350°.  Shape the dough into 2-inch wide logs on a lined cookie sheet.  Sprinkle logs with cinnamon-sugar.  Bake for 30 minutes.  Remove from oven and slice.  Turn on side, sprinkle with cinnamon-sugar and return to oven for 10 to 15 minutes.  If desired, dip one end in chocolate.
