Jicama, Papaya and Feta Salad

½ cup red wine vinegar
¼ cup honey
1 ½ cups olive oil
2 jicamas, peeled and julienned
1 large papaya, peeled, deseeded, and julienned
½ pound feta cheese, crumbled
1/3 cup chopped fresh mint
4 chile peppers, minced

Whisk together the vinegar and honey. Slowly whisk in the oil. Combine the jicama, papaya, feta, mint, and chiles. Add the dressing. Season with salt and pepper.
