2 lbs. shrimp, peeled and deveined
1/2 cup olive oil
1 tsp. each salt & pepper
1 tsp. paprika
1 clove garlic, minced
Toss shrimp with oil, sat, pepper, paprika and garlic. Grill, broil
or saute until done.
1 bunch cilantro
¼ cup coconut, unsweetened (can be purchased frozen at Asian
Markets)
2 cloves garlic, minced
1/3 cup toasted walnuts
½ cup peanut or olive oil
salt & pepper
In a food processor combine cilantro,
coconut, garlic and walnuts. Puree mixture while drizzling in the
oil. Season with salt and pepper to taste and toss with shrimp and
serve.
